2 whole chicken breasts, poached
1 C chopped onion
1 clove garlic, minced
2 Tbls butter
1 16 oz can chopped tomatoes
1 8 oz can tomato sauce
1/4 C chopped green chilis
1 tsp sugar, 1/2 tsp salt, 1.2 tsp oregano
1 tsp cumin, 1/2 tsp basil
12 flour tortillas
2 C Monterey Jack cheese, shredded
1 1/2 C sour cream

Directions:

Cut meat into 12 strips and set aside. Saute onion & garlic in butter until soft. Add rest of ingredients, except cheese & sour cream. Dip each tortilla in sauce, and fill with chicken and 2 Tbls cheese and place in a greased 9 x 12 casserole.Sprinkle with the remaining cheese. Bake at 350º for 40 minutes. Add sour cream to remaining sauce and cover enchiladas.
