Great for left over Chicken or Turkey.
1/4 C plus 1 TBS butter
2 large shallots finely chopped
6 TBS flour
1/4 C sherry
3 3/4 C chicken (Turkey) broth
1/2 C chopped parsley
1 TBS chopped fresh thyme
1 tsp salt
3/4 tsp fresh ground pepper
1/8 tsp grated nutmeg
1/8 tsp cayenne pepper
2 C chopped mushrooms
1/2 Heavy cream
3 C cubed chicken (turkey)
2 TBS chopped chives
1 C frozen peas thawed.

Directions:
Directions:
In large saucepan melt 1/4 C butter and saute shallots until soft (about 3 minutes)
Sprinkle in the flour and cook stir for 2 minutes.
Stir in the broth and sherry bring to the boil stirring all the time. Lower heat and simmer 20 minutes stirring frequently.
Saute mushroom in 1 Tbs butter in another pan.
Add parsley, thyme and peas to broth mixture after 20 minutes, bring to a simmer again, add chicken salt,pepper,cayenne and nutmeg sir bring to a simmer.
Add parsley, chives and cream bring to a simmer.
Serve in potato baskets or baked short pastry cups.
