Ingredients:  
2 cups sugar
½ t cream of tartar
1 cup boiling water
pecan halves
1 t pineapple flavoring or add mint (whichever preferred)

Directions:
Directions:
Mix all together and boil over medium heat (rolling boil) until hard ball stage. Then take from heat and let cool until pan is cool. Beat until white and creamy. Pour on buttered surface and knead. Work with until firm. Form into small balls. Place balls between 2 pecan halves and press together.
