Cream together:
1 c. shortening and 2 c. sugar
Sift together:
3 c. flour
3 tsp. baking powder
1/2 tsp. salt
Icying - Mix 2 packages frozen coconut with 1 small container of sour cream and 1 cup sugar together. Cool cake and frost. May be made a day or so ahead of time and kept in refrigerator.

Add the flour mixture to the shortening and sugar. Add four egg yolks, one at a time. Alternate eggs with 1 cup of sweet milk. Beat the four egg whites until stiff peaks form and fold into mixture last. Add 1 t vanilla. Makes three layers. Bake at 350º for 30 minutes.

Icing for Coconut Cake

Mix 2 packages frozen coconut with 1 small container of sour cream and 1 cup sugar together. Cool cake and frost. This cake may be made a day or so ahead of time and kept in refrigerator.
