2 c. corn meal and/or Masa
1/2 tsp. salt
2 T. Crisco
1 1/2 c. boiling water
3 T. flour
2 T. chili powder
1 egg (well beaten)
corn husks (washed and soaked in cold water for 2-3 hours)

Directions:
Directions:
Combine meal, salt and fat; add boiling water and mix thoroughly. Add flour and chili powder, then egg; mix well. Spread about 1/4 cup dough on husks to within 1" of edges. Spread dough with 2 T of tamale filling (see recipe). Roll lengthwise edges of tamale to center so they overlap. Wrap snugly in husk; fold up 1" at the end. Place tamales on rack and steam over hot water for 2 hours.

Tamale Filing - 1 clove garlic (minced), 1/4 cup chopped onion, 1 lb. ground meet, 3/4 cup tomato paste
1 cup water, 1 t salt 2 T chili powder - cook garlic and onion in hot fat until done and yellow then add remaining ingredients, cover and simmer for about 1 1/2 hours the drain off fat.
