For Salad:
3 cups fresh corn kernels (3-4 ears)
1 cup chop't celery
1 cup chop't scallions
1 bunch fresh cilantro
For Dressing:
1/2 cup baby coconut water
1/4 cup fresh lemon juice
2 T agave nectar
2 T olive oil
1 1/2 tsp sea salt
1/4 cup raw pine nuts

Directions:
Directions:
Mix all salad ingredients in large bowl. Mix all dressing ingredients in high speed mixer. Blend well, then add to bowl of salad ingredients.
