Candied Sweet Potatoes Recipe

6 large bright orange sweet potatoes
1 lb brown sugar
1 stick butter
2 C miniature marshmallows
2 tsp salt

Directions:
Directions:
Heat enough salted water to cover potatoes to boiling. Add potatoes, cover and heat to boiling. Cook until tender -- 30-35 min. Drain and slip off skins.

Cut cooked potatoes into 1/2" slices and arrange in buttered baking dish.

In saucepan, mix brown sugar, butter, and salt and cook over medium heat, stirring constantly, until smooth and bubbly.

Pour sauce over sweet potatoes.

Bake 20 minutes in 350º oven. Sprinkle with marshmallows and return to oven to bake until marshmallows are brown. (Watch carefully to make sure the marshmallows don't burn.)
