1 small clove garlic
2 tablespoons cold butter
4 eggs
2 cups heavy cream
3/4 teaspoon salt or to taste
1/4 teaspoon ground peper or to taste
1/8 teaspoon Tabasco sauce
5 medium russet potatoes (about 2 1/2 pounds), peeled and sliced 1/8 inch thick
3/4 pound smoked gouda, Shredded, divided

Preheat oven to 350 degrees. Rub a 2 1/2 quart casserole dish with garlic, then butter. Discard garlic.

Whisk together eggs, cream, salt, pepper and Tabasco; set aside.

Arrage one layer of potato slices in prepared dish; sprinkle with about 1/3 of the cheese. Repeat layers twice, ending with cheese. pour eg mixture over.

Place dish on a rack in a larger pan; add hot water to larger pan until about halfway up sides of casserole dish. Bake about 1 1/2 hours, until potatoes are tender. (Test with a paring knife inserted near the center.) Let cool at least 15 minutes before serving

For a stronger garlic flavor, chop or press the garlic clove and add to the egg mixture.
