1 sleeve Ritz crackers
1 stick melted butter (not margarine)
2 to 3 Vidalia onions, sliced thin
salt & pepper to taste or use Tony's
1 cup shredded cheddar cheese
Hot Sauce (Louisiana is best)

Directions:
Directions:
Combine cracker crumbs and melted butter
Press 3/4 cracker crumbs into pie pan (reserving the rest for topping)
Wilt onions with a little butter until just clear, place in pie crust.
Salt & pepper to taste
Add a few drops of hot sauce
Cover with grated cheese
Sprinkle with remaining cracker crumbs.

Bake at 350º until cheese melts
