CRANBERRY RELISH - single batch

4 apples - Granny Smith - green color is good - dice

2 oranges - fine dice

2 bags cranberries - dice

2 cups chopped pecans

2 cups sugar

Mix all together and enjoy. Best to make ahead to let flavors blend for 2-3 days or longer.
If you are using a VitaMix, chop each ingredient on the lowest speed. You can also use a hand grinder.

When we were very young, Aunt Mary Harkin and Florence asked what flavor pancakes we wanted; apple,orange,nut, or cranberry. We each got what we asked for - not knowing they were all the same - with cranberry relish!! Mom and Mary had the biggest laugh.
