1/3 C shortening
1/2 C sugar
2 eggs
1 3/4 C flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1 C mashed ripe banana
1/2 C chopped walnuts (optional)

Directions:
Directions:
Cream together shortening and sugar; add eggs and beat well. Mix dry ingredients; add to creamed mixture alternately with banana, blending well after each addition. Stir in nuts (optional). Pour into well-greased 9x5x3 inch loaf pan. Bake @ 350º for 45-50 minutes or until done. Remove from pan; cool on rack. Wrap and store overnight.
