Ingredients: 4 eggs 2 c. sugar 1 c. salad oil (Wesson) 2 c. flour 1 c. canned pumpkin 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. vanilla 1 tsp. salt
Cream Cheese Frosting: 1 8 oz. cream cheese 1 stick butter (not margarine) 1 box 4xxx confectioners sugar 1 c. chopped pecans 1 tsp. vanilla

Directions:Mix eggs in a large bowl. Beat in 2 cups sugar. Add oil and mix. Add pumpkin and mix. Sift flour, soda, cinnamon and add. Add vanilla and salt and mix thoroughly. Bake 350º 35 to 40 minutes. Use greased and floured layer cake pans. Turn out after 15-20 minutes on cooling rack. Frost after cool.
Frosting: Mix well cream cheese, butter, and powdered sugar. Add vanilla and chopped pecans. Keep frosting refrigerated. |
