6 cups Zucchini(peel, cut lengthwise, remove seeds, and slice 1/4 inch thick)
1 cup granulated sugar
1/2 cup brown sugar
2 tsps. cinnamon
1/4 tsp. nutmeg
1 1/2 tsp. cream of tartar
2 Tbsps. flour
1/2 tsp. salt
1 Tbsp. butter
pie crust - bottom & top

Directions:
Directions:
Preheat oven to 475 degrees
cook zuchinni slices in boiling water until barely tender, about 2 minutes. Remove from stove, drain very well and cool. In a bowl, toss zuchinni with sugars, cinnamon, nutmeg, cream of tarter, flour and salt until well coated. Fill the pie shell with the zuchinni mixture. Dot with butter. Top with crust. Sprinkle with sugar. Bake for 15 mimutes at 475 degrees, then reduce heat to 350 degrees and bake about 1 hour. Serve hot!
