1 pkg. pork sausage (can also use portuguese sausage or half of each)
5 c. cubed day old bread
2 c. shredded cheddar cheese
1/2 c. chopped onions
1/2 c. chopped bell peppers
1/2 c. sliced mushrooms
1/2 c. chopped tomatoes
10 eggs, slightly beaten
4 c. milk
1 tsp. dry mustard
1 tsp. salt
fresh ground pepper to taste

Directions:
Directions:
Saute, drain & crumble sausage, onions, & bell peppers.

Place bread in a well-buttered 9x13 pan.

Sprinkle with cheese.

Combine eggs, milk, dry mustard, salt & pepper. Pour evenly over bread & cheese. Allow bread to soak mixture.

Sprinkle sausage, onions, bell pepper, mushrooms, & tomatoes over top.

Cover & chill overnight.

Preheat oven to 325º. Bake uncovered for about one hour. Tent with foil if top begins to brown too quickly.
