2 Large Vidalia or other sweet onions, peeled & quartered
1 Tbsp. olive oil
1 tsp. salt
1 whole garlic head
1/3 C sour cream
1/4 C chopped fresh parsley
1 Tbsp. fresh lemon juice

Directions:
Directions:
Preheat oven to 425º Place onion pieces in a
large bowl, drizzle with oil & sprinkle 1/2 tsp. salt.
Toss to coat. Remove papery skin from garlic
but leave whole and wrap in aluminum foil.
Place onion pieces and wrapped garlic
head on baking sheet & bake at 425º for
1 hour. Let cool for 10 minutes and chop
onion. Separate garlic cloves & mash the
pulp. Discard the skin.Combine onion, garlic,
the rest of the salt, sour cream, parsley, &
juice in large bowl. Cover & chill at least one hour.

Do this one the night before- the flavors are
intensified. This is a sweet dip- add hot sauce
