GRAHAM CRACKER CRUST
1½ c. graham cracker crumbs
¼ c. sugar
¼ c. melted butter

CHEESECAKE
2 lbs. cream cheese - softened
1 c. sugar
4 eggs
1 tsp. vanilla
¼ c. flour
¼ c. half & half
1 c. sour cream

Preheat oven to 350º. Mix together ingredients for crust and press itno the bottom of a 10" springform pan. Soften cream cheese in microwave for about 1 minute. Place into a large mixing bowl and blend with an electric mixer just until smooth. Add sugar and mix until blended. Add eggs and vanilla and mix again, just until blended. Add flour, half & half and the sour cream and mix just until blended. Pour batter over the graham cracker crust. Place pan into a bigger baking pan and fill outer pan with hot water. Bake about 1 hour or until set. If it starts to brown too much, turn down the heat to 325º. Remove from oven and refrigerate overnight before cutting. Serve with hot fudge or berries.

Get creative:
Chocolate Mint: Add 3 oz. chocolate that has been melted and cooled to the batter. Replace vanilla with mint extract.

Amaretto: Replace half & half with Amaretto. Top batter with sliced almonds before baking.

Blueberry, Raspberry or Strawberry: Replace half & half with about 1 cup berries in juice.
