2 15 oz cans dark red kidney beans, drained and rinsed well
1 red bell pepper, seeded and chopped
3 scallions, whites and greens chopped
1 rib celery, chopped
1/4 cup fresh parsley, chopped
1 cup sweet red pepper relish (like Harry & David's Sweet Pepper and Onion Relish)
2 T light olive oil
1 T vinegar (apple cider white or red wine)
Coarse salt and fresh ground pepper, to taste

Directions:

Combine all ingredients in a medium bowl, toss well and adjust seasonings.

Red onion in place of scallions is a good substitute.
