2 pounds small red potatoes, cut into quarters
2 T olive oil
2 T fresh thyme
1/4 teaspoon pepper
2 (14-ounces) cans artichokes, drained and cut into halves
1 purple onion, cut into 1- to 2- inch pieces
1/2 cup crumbled feta cheese
Paprika to taste

Line a 9x13 inch baking dish with foil. Spray with nonstick cooking spray. Combine the potatoes, olive oil, thyme and pepper in a sealable plastic bag and seal tightly. Turn to coat. Pour potato mixture into the prepard pan.

Roast at 425º for 45 - 50 minutes or until potatoes are tender, stirring occasionally and adding the artichokes and onion during the last 20 minutes of the baking process. Toss the potato mixture with the feta cheese in a serving bowl. Sprinkle with paprika. Serve immediately.
