4 cod fillets, 8 oz each
1 small shallot, chopped
pepper, freshly ground
1 ˝ Tbsp. capers, drained
˝ cup flour
2 tsp. Dijon mustard
2 Tbsp. butter
˝ cup heavy cream

Directions:
Directions:
Sprinkle cod with pepper. Dust the fillets in the flour. Melt butter in a large skillet. Add the fillets, and fry for approximately two minutes per side, or until done. Remove to a serving dish and keep warm.

Sauté the shallot for 1 minute. Add the capers and mustard. Cook rapidly, scraping up any bits that remain on the bottom. Add the cream and continue to cook, stirring frequently, until the sauce thickens enough to lightly coat a spoon. Spoon the sauce over the fillets and serve immediately.
