Budget price, 20-25% fat, some shrinkage

Ground Chuck:
Medium price, 15-20% fat, less shrinkage

Ground Round:
Higher price, about 11% fat, little shrinkage

These types can be used interchangeably. Keep in mind the difference in cost, fat content and shrinkage.
