1 cup sugar
3/4 cup salad oil
1 1/2 cup flour
1/4 tsp salt
1 cup grated carrots
1 tsp cinnamon
1 tsp baking powder
1 tsp soda
2 eggs, beaten

Directions:
Directions:
blend sugar and oil together, add next 5-ingredients. add beaten eggs and fold in carrots, pour in loaf pans
Bake for 1-hour @ 350º

Top with cream cheese combined with orange juice, sugar and dash of salt.
