1 1/2 lb. beef chuck, cut into 1" cubes
1 T. shortening
1 clove garlic, minced
1 medium onion, chopped
1/2 tsp. salt
1/8 tsp. pepper
1 can of tomato soup
3/4 c. red wine*
1/4 c. water* - can substitute 1/2 c. lemon juice and increase water to 3/4 c. instead of wine.
1/4 tsp. powdered basil
1/4 tsp. powdered thyme
1/2 c. ketchup
3 medium carrots, cut into 1/2 inch diagonal pieces
1 1/2 c. 1" diagonally cut celery
4 medium potatoes, peeled and quartered

Lightly brown meat in shortening. Add garlic and onion; sauté until transparent. Sprinkle with salt and pepper. Stir in soup, wine and water. Cover; simmer 30 min. Add herbs and ketchup. Arrange veggies on top of meat and gravy. Cover; simmer 1 1/2 hrs. or until met and veggies are tender. Add more water if necessary. Makes six servings. This is very colorful stew. Most are dirty brown.
