5 medium sized sweet potatoes, pared
1 cup orange juice
1/4 cup butter
1 egg, slightly beaten
1 tsp. salt
1/4 tsp. cinnamon
marshmallows to cover top

Directions:
Directions:
Cut sweet potatoes into large chunks. Cook, uncovered, in juice for about 20 minutes or until tender. Drain, reserving juice. Preheat oven to 350. Mash the potatoes well and add butter, egg, salt, cinnamon and about 1/3 cup reserved juice. Beat with mixer until creamy. Spoon into baking dish and top with marshmallows. Bake uncovered for 30 minutes or until golden brown.

This is a traditional holiday dish for my family - reminds us of our southern roots. "Mrs. Wilkes" is a relative who owned a famous boarding house restaurant in Savannah (until her death a few years ago) - check it out next time you're down there!
