6 each boneless skinless chicken breast
1 package taco seasoning (I use Hain – no MSG)
3 15-ounce cans black beans -- rinsed and drained
1 small red onion – chopped (optional)
1 tablespoon chili powder (or to your taste)
3 teaspoons ground cumin
Vegetable oil -- as needed
1/2 cup chopped cilantro
3 tablespoons lime juice
Salt -- to taste
12 6-inch flour tortillas
1 cup shredded cheese

Directions:
Directions:
Place chicken and taco seasoning in a crockpot and cook till tender
and easily shreddable, about 7 hours on low.

In large bowl, toss together beans, onion, chili powder and cumin. Heat large skillet over medium-high heat, film with a little oil and stir-fry bean mixture until heated through, about 3-4 minutes. Toss bean mixture with chopped cilantro, lime juice and salt to taste.

Serve shredded chicken with beans, warmed tortillas, shredded cheese, salsa.
