1/4 cup butter
1/2 cup all purpose flour
1 cup heavy cream
1-1/2 tsp pepper
1/2 tsp salt
1 cup dry bread crumbs
2 cans salmon or 2pds cooked salmon, skinned, deboned, (optional)
2tlbs butter
1 medium yellow onion (chopped fine)
3 tlbs all purpose flour
1/4 cup cooking oil (any brand)

Blend butter and 1/2 cup flour in bowl. bring cream to boil in a small saucepan, blend in butter and flour mixture.
remove from heat, add pepper, salt, bread crumbs and salmon. Mix throughly and then spoon into dish to cool.
Heat in large skillet medium high add 2tlbs butter and saute onion until done. add contents of frying pan to the cooled salmon mixture. if the mixture is too dry add more cream or if too moist add more bread crumbs. form into patties, Roll patties into the flour. cook patties in hot oil over medium heat until cook through and golden, brown approximately 10-minutes on each side
garnish with lemon and parsley flakes.
