1/2 c soy sauce
1/2 c olive oil
3-4 cloves garlic - coarsley chopped
3 T c peeled, chopped fresh ginger
2 T coarsley chopped thyme
1 t hot sauce
1 bay leaf
2 lb flank or skirt steak
salt & fresh ground pepper

Marinade: Combine soy sauce, olive oil, garlic, ginger, thyme, and bay leave in a glass bowl. Place meat in a glass dish or zip lock bag; add marinade. Refrigerate for 2-24 hr.

Heat grill or broiler on medium high heat. Grill meat to medium rare and crispy on the outside. This should only take 2-3 min per side on a very hot grill. Remove meat and let rest 10 min.

Slice on the diagonal for Flank Steak or serve Skirt Steak in 4-6 oz whole portions.
