3 apples, peeled and thinly sliced
2 c plain flour
2 1/2 t baking powder
2 t salt
3 eggs, beaten
1/3 c sugar
3 c milk, may need a bit more
3 T butter
1 t ground ginger
1/2 t ground mace
1/2 t grated nutmeg

Pre-heat oven to 375º. Peel and thinly slice the apples. Over medium heat, melt the butter in a 10" cast iron skillet. When the butter melts, add apples. Fry the apples until lightly browned. While the apples fry, mix together flour, baking powder, salt and sugar. Beat together the milk and eggs. Add the milk to the flour. Beat with a wire whisk until frothy. The batter should be very runny, if not add more milk to make it a pouring consistency. Remove apples from heat and pour batter over them. Bake until golden brown and puffy, approximately 20 minutes. Serve warm with heavy cream and maple syrup.
