2/3 C uncooked wild rice
1 lb. ground beef
1 large onion diced
1 C diced celery (3 C if doubled)
1 tsp. salt
1/4 tsp. pepper
1 can undrained mushrooms
1 can mushroom soup

Directions:
Directions:
Saute onion and celery with ground beef until tender. Add mushroom soup and add cooked rice and bake @350º for 45 minutes. Double batch serves from 12-16 people.

How to cook wild rice
2/3 C rice (4oz.)
Wash in small holed colander until water runs clear. Place rice in saucepan and cover with 3 C cold water and 1/2 tsp. salt. Bring to a boil for 1 minute. Lower temp. to simmer. Cover and cook for 45 minutes until tender. Looks like it pops open. Drain and rinse with hot water.
