6 medium potatoes
1 large onion
8 oz. colby cheese
1 stick butter (melted)

Directions:
Directions:
Boil potatoes with skins on until just fork tender. Cool and remove skins. Slice a layer of potatoes into buttered casserole. Sprinkle with salt and pepper. Separate the rings of an onion slice onto potatoes. Drizzle with butter sparingly and top with a layer of cheese. Repeat layers until casserole is full ending with cheese on top. Pour milk over. Cover and bake in 350º oven 30 minutes or until cheese is melted and casserole is bubbly.
