4 shell steaks, about 1 ‘/2 inches thick (¾ to 1 pound each), at room temperature
¾ cup olive oil
¼ cup balsamic vinegar
2 tablespoons soy sauce
juice of 1 lemon
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
1 tablespoon dry mustard
1 teaspoon chopped parsley, including stems
1 teaspoon freshly ground pepper
salt

1 Arrange the steaks in one layer in one or more large glass dishes.
2 Combine all remaining ingredients except salt and butter and blend well. Pour over the meat. Allow to marinate 1 to 2 hours at room temperature.
3 Build a charcoal fire and allow it to reach the gray ash stage. Gently tap coals to shake off the ash. Move coals so they are about ½ inch apart to moderate heat.
4 Remove steaks from the marinade and ~ place them on the grill. Lower it as close as possible to the heat source. Sear for 2 minutes, on one side only, to seal in the juices. Raise the grill about 4 inches from the coals and continue grilling until tiny bubbles of juice appear on top of the steak. Only then, turn steak with tongs; do not use a fork or other utensil that will pierce the meat. Turn only once.
5 Repeat grilling procedure as for first side; lower grid to sear second side for 2 minutes, raise grid to 4 inches above coals and continue grilling. Total cooking time will be 12 to 15 minutes. Remove from grill and spread some butter on each side of steak, adding salt to taste.
