4 lo;in pork chops, cut 1 inch thick trimmed of excess fat
1 T olive oil
1 T butter
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. white wine
1-1/2 c. finely grated Gruyere cheese
1 T. Dijon mustard
1/4 c. heavy cream

Directions:
Preheat oven to 350 degrees. Brown chops 4 to 5 min. on a side in oil and butter in a large flameproof pan. Drain. Sprinkle with salt and pepper, add wine and bake uncovered 50-60 min.until chops are tender. Meanwhile, blend together cheese, mustard, and cream. When chops are tender, spread top of each with cheese mixture and broil 3 inches from heat 2-3 min. until lightly speckled brown.
