1 c. brown rice
1 T. chicken bouillon granules
3 T. vegetable oil
1 c. thinly sliced carrots
3 green onions sliced, including tops
1 garlic clove, minced
1 large green pepper, thinly sliced
1 c, thinly sliced zucchini
1 c. thinly sliced mushrooms
1/2 c. slivered almonds
5 T. soy sauce

Directions:
Directions:
The day or morning before serving, cook rice according to pkg, directions, adding chicken granules to water. Cool completely in refrigerator.
Heat about 1 T. oil over high heat. Add carrots and stir 1 min. Add onions, garlic and pepper; stir-fry 1 more minute, adding more oil if needed.
Add zucchini, mushrooms and almonds; cook 2 min. more until tender crisp.
Add rice and stir until heated. Season with soy sauce.
