1 c sugar
1/2 c milk free, soy free margarine
1/2 c shortening
1 1/2 tsp vanilla extract
3 tbsp water, 3 tbsp oil & 2 tsp baking powder, mixed together
3 c flour
1/2 tsp baking soda
1/2 tsp salt
8 drops yellow & 4 drops red food coloring

Directions:

Preheat oven to 400º. In a large bowl, mix sugar, margarine and shortening with electric mixer. Stir in vanilla extract and water, oil and baking powder mixture. Add flour, baking soda, salt and food coloring and mix well. Place dough between 2 sheets of waxed paper and roll to 1/4" thickness. Cut out with pumpkin cookie cutter. Use excess dough to cut shapes for jack-o-lantern faces. Bake 8 minutes or until lightly browned. Cool 3 minutes before transferring to rack to finish cooling.

You may use your favorite icing to decorate the faces if you prefer.
