Cook the spaghetti
Homemade tomato sauce (in this book)
Fresh squid, cleaned, and cut reserve the water it makes in the bowl.
Italian bread for dipping

Cook the spaghetti in one pot, cook the tomato sauce in another. Calamare cooks in just a few minutes, don't over cook. It should be tender not rubbery. In the pot of sauce add the calamare and the little water it contains. Cook for 15 min. Serve over pasta or just big chunks of crusty Italian bread. Top with black pepper and serve with a nice Chianti.

I remember bringing Chris to my grandparents house for the first time and my grandparents made this dish. I wasn't sure if they were testing my Anglo boyfriend to see if he would eat this. But boy did he love it and he went for seconds and thirds. I knew then that he was accepted. We really plumped that skinny boy up that year. I can still hear my Nonna saying, "Christofa, you look good in the face!"
