Cooked rice
1 chicken sectioned
1/2 c. flour
1/3 c. oil for frying
1 tsp. salt
1/4 tsp. pepper
1 can pineapple reserve juice
1 c. sugar
2 T. cornstarch
3/4 c. vinegar
1 T. soy sauce
1/4 tsp. ginger
1 chicken boullion
1 red bell pepper

Directions:
Directions:
Wash and dry chicken and coat with flour. In hot oil, brown chicken. Arrange in roasting pan and sprinkle with salt and pepper. Heat oven to 350º. In saucepan add pineapple and 1 1/4 c. water, mix in sugar, cornstarch, pineapple juice, vinegar, soy sauce, ginger and boullion. Boil 2 min. Pour over the chicken and bake 30 min. Add pineapple slices and green pepper and bake 30 min. more. Serve over rice.
