1 lb. lean boneless pork chops
6 T. low sodium soy sauce divided
1 1/2 T minced ginger root
5 garlic cloves minced
1/4 lb. udon or low mein noodles
5 tsp. frying oil divided
5 c. sliced nappa cabbage
2 c. sliced onion
1 c. shredded carrot
1 tsp. red pepper flakes
6 T. rice wine vinegar
1 1/2 T sugar
1/2 tsp. sesame oil

Marinate pork strips in 2 T. soy sauce, ginger and garlic. Refrigerate 30 min. Cook noodles and set aside. Heat 2 tsp. oil in a wok and add pork, until done about 5 min. Set aside. Heat 3 tsp. oil on med hi heat and add cabbage, onion, carrot and red pepper. Stir fry 4 min. Add 4 T. soy sauce, rice vinegar, sugar and sesame oil. Sitr fry 1 min. Return the pork until heated, add noodles and toss 1 min.

This is always a winner. The cabbage shrinks so don't be alarmed by the bulk in the beginning. You can substitute rice for the noodles too. Enjoy!
