1 c. flour
1 c. water
2 eggs
Ricotta
mozzarella
parsley
grated parmesan
salt and pepper
Homemade tomato sauce

Directions:
Directions:
Combine flour, water and eggs. Grease a griddle and spread the batter thin, cooking multiple crepes. Use the back of a spoon to spread thin. But not paper thin!
In a bowl, season ricotta with parsley, grated parmesan and mozzarella. Roll the cheese mixture into the crepes. Pour some tomato sauce on top and bake 15-20 min 350º.

This recipe is so light and delicate compared to some pasta dishes. We enjoy this as a 1st course on Christmas.
