2 - 16oz. cans black beans
6 bacon strips
1 onion, chopped
1 fresh serrano or jalapeno chili pepper, diced
13oz. can chicken broth
2 c. cooked finely chopped chicken or turkey
1/4 c. monterey jack or cheddar cheese, shredded
sour cream (optional)
tortilla chips

Directions:
Directions:
Rinse and drain black beans and place in stock pot. Fry bacon in skillet; chop and set aside. Sauté onions in bacon grease; drain grease and add onions to beans. Add chili pepper; stir in broth. Add chicken or turkey to mixture. Bring to a boil; cover and simmer for 20 minutes, stirring occasionally. Pour two cups of soup into a blender; mix until it thickens, then return to stock pot. Add more broth or water if soup seems too thick. Pour into bowl and top with shredded cheese, sour cream, chopped bacon and tortilla chips.
Serves 6.

Vegetarian version – just skip the bacon and chicken breast and use vegetable broth for chicken broth.
