2 lb. salmon
1 handful cilantro
1 handful parsely
2 Tbs. mint leaves
2 jalapeno peppers
1 Tbs. ginger
2 garlic cloves
2 Tbs. lemon juice
2 Tbs. olive oil
2 tsp. cumin seeds, toasted
1 tsp. salt

Directions:
Directions:
In food processor place cilantro, parsley, mint, peppers, ginger,
garlic, lemon juice, oil, cumin and salt. Pulse to paste.

Cut slashes 1 to 2 inches apart on the fish.

Stuff spice mix into the slits. Cover and refrigerate for 1 hour.

Preheat oven to 425 degrees.

Put fish in the oven and cook for 10-20 minutes until fish flakes
easily when tested with a fork.
