1 C shortening
1 C packed brown sugar
1 C granulated sugar
1 C chunky peanut butter
2 eggs
2 3/4 C flour
2 tsp soda

Directions:
Directions:
Cream together shortening, sugars and peanut butter.
Add dry ingredients.
Shape into rolls, roll in wax paper, and refrigerator or freeze.
Rolls of cookies may be soft, but will slide off easily into 1/4" slices.
Bake on ungreased cookie sheet at 375º for 8-10 min.
Do not overbake.

So great to make ahead and pull out for instant cookies. When the kids were little I would make these when their friends (Michael and Melissa Connelly) popped over to play for the afternoon.
