4 1/2 lbs of sweet potatos or yams, peeled and cut
1 c. milk
3 T. flour
1 tsp baking powder
1/2 c. chopped pecans (Aunt Margaret prefers walnuts)
1/4 tsp. cinnamon
4 eggs
1 tsp. coconut ext
1 tsp. almond ext
1 tsp. vanilla ext
2 T. brown sugar
1 stick butter
1/4 tsp. salt
3 tsp. white sugar

Directions:
Directions:
Boil the yams until done. Beat with an electric mixer until smooth. Add butter, white sugar, and one egg at a time. Add flour, baking powder, milk, salt and extracts. In a small bowl, combine nuts, brown sugar and cinnamon. Place the yam mixture into a large baking dish and sprinkle the nut mixture on top. Bake 350º, for 1 hour.

Soooo good!! This recipe is a Thanksgiving must. I passed it on to my in laws and so on and so on. The last I heard, it made it to California for Thanksgiving too. Thanks Aunt Margaret.
