whole rainbow trout ...2 (may substitute 2 fillets)
tomato...1
chopped parsely...1T.
oregano (or your favorite herbs)...2-3 bunches
flour...1-2T.
olive oil...1T.
butter...3T.
lemon juice...1-2T. (to taste)
Hawaiian salt and fresh ground papper

Directions:
Directions:
1. rince the fish and pat dry paper towels.
2. sprinkle Hawaiian salt and papper over them. Finely dice
tomato. pick the oregano leaves out of the brunches.
3. powder the fish with flour, fry both sides over the medium
heat. (if using fillets, fry skin-side first) place the fish on the
plate.
4. wipe the pan with paper towel, add butter and fry lightly
tomato.
5. stir parsely and oregano into the tomato for 5 seconds, add
lemmon juice and Hawaiian salt and papper to taste.
6. pour the mixture over the fish
