Large bunch of Escarole cleaned and chopped
onion
garlic
olive oil
1 can diced tomatos with juice
chicken broth
diced summer sausage
white cannellini beans
salt and pepper to taste

Directions:
Directions:
In a pot lightly saute onion and garlic in oil. Add diced tomatos and chicken broth. Add escarole and cook until almost done. Add pieces of sausage, beans and more broth if not soupy enough. Cook until done and season with salt and pepper. When serving, drizzle a little olive oil on top and serve with black pepper and Italian bread.
