1½ cups water
1 cup olive oil
3 garlic cloves, squeezed through a garlic press
1” anchovy paste
2 Tbsp. butter
Juice of 1/2 a lemon
3 tsp. dried basil
2 tsp. dried parsley
1/4 tsp. dried oregano
1 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Add all ingredients together and simmer for 1/2 hour. Serve with any long pasta and pour over as much as needed. Serve with pecorino romano cheese and good crusty Italian bread.
TO MAKE CLAM SAUCE: Same as above, just add 4-6 cans of minced clams (8-10 oz), crushed red pepper to taste and then simmer. —To make red clam sauce, add some tomato sauce, to your liking.

This is a very quick & delicious recipe. The smell of garlic......a most definite memory in the Corvelli household. Homer says this is the first dish Mary Grace served him, as a pasta, along with a salad. Crusty bread is a must for sopping up the sauce.
