3 c. mashed cooked sweet potato, about 2 1/4 lbs.
1/3 c. firmly packed brown sugar
1/3 c. skim milk
2 T. reduced-calorie stick margarine, melted
1 tsp. vanilla extract
1/2 tsp. salt
2 egg whites, lightly beaten
1/2 c. firmly packed brown sugar
1/4 c. flour
2 T. chilled reduced-calorie sitck margarine
1/3 c. chopped pecans

Directions:
Directions:
Combine first 7 ingredients in a bowl, and stir well. Spoon mixture into an 8" square pan coated with Pam. Combine 1/2 cup brown sugar and flour in bowl, and cut in 2 Tbsp chilled margarine with a pastry blender or 2 knives until the mixture resembles coarse meal. Stir in the chopped pecans, and sprinkle over sweet potato mixture. Bake at 350º for 30 minutes.
