2 T. olive oil
1 T. lime juice
1/4 c. chopped cilantro
1/4 tsp. salt
1/4 tsp. pepper
2 1/2 c. shoepeg corn kernals
1 diced tomato seeded
1 red bell pepper diced
1/2 red onion finely diced
2 c. black beans drained and rinsed

In a bowl whisk olive oil, lime juice, cilantro, salt and pepper. Add other ingredients and toss to coat. Serve room temp.
