2 large leeks whites and light green
1 T. butter
3 large eggs, lightly beaten
1/2 c. heavy cream
1/2 tsp. salt
1/4 tsp. pepper
1 c. grated swiss or Gruyere cheese divided
1 unbaked pie crust

Directions:
Directions:
Heat oven to 350º. Thinly cut leeks crosswise. In skillet, melt butter add leeks 5-6 min. until tender on med heat. Remove and set aside. In a bowl whisk eggs, with salt and pepper, add leeks and cream. Sprinkle 3/4 c. cheese on bottom of pie shell. Pour egg mixture in the pie and sprinkle with remaining cheese. Bake 45 min. or until set in the middle. Then, broil 6" from the element for 2 min until golden.
