3 c scalded milk
1/2 c sugar
1/4 t salt
1/2 t vanilla (or lemon) extract
3/4 c cooked rice

Beat eggs slightly, add the sugar, salt, and flavoring. Pour in the scalded milk. Strain and pour into a buttered casserole dish. Add the rice, and raisens if you wish. Sprinkle with a few grains of nutmeg, set in a pan of water and bake for an hour at 350º.
