12 large shrimp
2 tomatos chopped
1 scallion
1 clove garlic minced
Juice of 2 limes
1 tsp. salt
1/2 tsp. pepper
1/2 diced avocado
1 diced cucumber seeded
bunch cilantro
Clamato
1/4 c. clam juice
1/2 can cooked corn niblets

Directions:
Directions:
Boil shrimp until pink. Drain, cool and shell. Mix tomatos, scallions, garlic, lime juice, salt, pepper, cilantro, cucumbers, corn, clam juice, and Clamato until submersed. Refrigerate for 3 hours or overnigt.
Just before serving add diced avocado and garnish with lime wedges. Do a taste test and adjust as needed.
