2 T white wine vinegar
2T stone ground or dijon mustard
1/2 ttsp. Worcestershire sauce
1 tsp dried tarragon
1 pinch of sugar
1/4 C olive oil

1-1/2 lbs thin fresh asparagus

Directions:
Directions:
Cook asparagus until crisp tender and then plunge into ice water.

Prepare dressing by combining all ingredients except olive oil. Add oil slowly until emulsified.
I use a mini-cuisinart.

Arrange arrange asparagus on a platter and drizzle with sauce. Reheat in microwave.

Also good at room temp. as a salad. This is a great vegetable dish that you can make early in the day and then heat just before serving.
